Induction Hob vs Gas Hob: Which Is Better in Malaysia?

Short answer

Induction is usually the better fit in Malaysian apartments, hotels, mall F&B, and any kitchen that is already air-conditioned or restricted on open-flame gas. Gas still wins where you have a reliable LPG supply, a proper flue, and a wok station that depends on a visible flame wrapping the pan.

The useful question is not “which technology is superior in a lab.” It is which one matches your electrical board, your extraction, and the way the cook actually works. A 3.5 kW tabletop induction cooker at the pass is a different job from a 15 kW commercial induction wok station.

Heat, control, and Malaysian cooking

Induction heats the pan, not the air around it. On a flat hob, boil-up is typically faster than the same pan on a domestic gas ring because more of the energy goes into the metal. That matters in a small KL apartment kitchen where the air-conditioner is already fighting stove heat.

Wok cooking is the exception people actually care about. A round-bottom wok on a flat induction glass will sit badly and heat in a ring. If stir-fry is the main job, specify a round wok glass hob (for example the AP-F35 built-in wok hob or a tabletop wok model) rather than expecting a flat cooker to behave like a gas wok burner.

Control is digital or knob-limited on induction; gas gives a visual flame. Chefs used to “hearing” a gas wok need a short handover on an induction wok station. The heat is still there — 3.5 kW to 15 kW in this catalogue — but the cue is the pan, not the fire.

Indoor air, high-rises, and commercial buildings

Gas combustion puts water vapour, carbon dioxide, and — if the burner is poorly tuned — carbon monoxide into the kitchen. Malaysian high-rise condos, hotels, and shopping-mall kitchens often prefer or require electric cooking because the building already struggles with makeup air and because open flame is a fire-management issue.

Induction does not remove the need for extraction. Oil smoke from frying still needs a hood. What you avoid is the extra heat and moisture of a gas flame under that hood, which is why hotel breakfast lines and show kitchens in Malaysia have moved heavily toward built-in induction hobs.

LPG versus electricity — how to compare without fake numbers

A blog that quotes one sen-per-kWh figure for “Malaysia” is already out of date. Domestic and commercial TNB tariffs change, and LPG cylinder prices move. Compare the two on site like this:

  • Estimate useful kWh for induction: nameplate kW × hours of use × duty cycle (often 0.3–0.5 in a real service, not 1.0). See how much electricity an induction hob uses.
  • Multiply by the tariff that actually applies to that meter (domestic vs commercial, current TNB schedule).
  • For gas, use cylinder or piped LPG invoices for the same service hours, not a brochure “efficiency %”.
  • Add air-conditioning cost if the kitchen is enclosed — gas dumps more heat into the room.

Induction usually converts a higher share of electrical energy into the pan. Gas loses a lot of heat around the wok. That does not automatically make induction cheaper every month; a 15 kW wok station on three-phase power will still be a serious electrical load. It does mean you should not compare a 2 kW domestic hob to a commercial gas range and call the result a general rule.

When gas is still the better choice

Keep gas if the kitchen is a traditional kopitiam or hawker set-up with a proven LPG line, a wok hei style that depends on flame, and no spare electrical capacity. A site that already trips the board when the rice cooker and air-con start is not ready for a 5 kW induction cooker until the electrician upgrades the circuit.

Can induction replace a gas wok in a Malaysian restaurant?
