Start with the station, not the catalogue
Write down what the cook will do for 80% of service: boil stock, sauté à la minute, wok fry, deep fry, grill on a plate, or hold buffet pans. A 3.5 kW tabletop cooker at the pass and a 15 kW wok tower are both “commercial induction,” and they are not interchangeable.

Wattage that matches Malaysian foodservice, not a home hob
Domestic hobs around 2 kW are for family pans. Commercial tabletop cookers in this range are typically 3–5 kW so a wok or stockpot actually recovers heat between orders. Fryers and wok stations step to 8–15 kW and three-phase. Buying a 2 kW hob “to save electricity” on a restaurant pass usually means slow recovery and chefs turning the gas back on.
Read the written wattage on the model page. Dual-zone units list two loads (for example 3.5 kW + 3.5 kW). The electrician needs the combined figure and whether both zones can run at once.
Installation type decides the furniture, not the other way around
- Built-in: carpenter cuts a hole; you need dimensions, ventilation under the counter, and a separate control panel on some wok hobs (AP-F35).
- Tabletop: fastest to deploy on an existing table; still needs a dedicated circuit and clearance for the fan.
- Free-standing range / wok / fryer: floor space, three-phase isolator, extraction, and in the case of fryers, oil and fire practice.

Controls, duty cycle, and what “commercial” means
Knob control is faster with wet or gloved hands; touch control is easier to clean on a buffet. Neither replaces a hob that is rated for continuous foodservice. A light-commercial 3.5 kW cooker at a hotel breakfast line is a different duty from a 15 kW wok on Saturday night. If the spec sheet lists a timer and a holding range, check whether you are actually buying a cooker or a warmer.
